Great site for some crazy food combos and cholesterol hell

Some of the food sounds good others ..gross.


Some easy dinners ideas.

hamburger casserole:

cooked hamburger on bottom of casserole
tomato soup next
mashed potatos or instant on top..
sprinkle with cheese.

bake til potatoes are a little brown

( I like green beans in it.. but the rest of the family doesnt)

Touchdown taco dip ( got this from a recipe book)

I also add hamburger on the bottom

1 -16 oz can refried beans
8 oz cream cheese -- softened
1 pkg (1.25 oz) taco seasoning mix
2 garlic cloves, -- minced
1 small tomato, -- cored and diced
1/4 cup onion, -- chopped
1/4 cup black olives, -- chopped
2 tbsp fresh cilantro, -- chopped
1/2 cup shredded cheddar cheese
Sour cream
Baked pita or tortilla chips

Preheat oven 375 degrees. Spread refried beans onto bottom of deep dish pan. Combine cream cheese and seasoning mix in medium-size bowl. Add minced garlic to cream cheese mixture; spread over beans. Sprinkle tomato, onion, olives, and cilantro over cream cheese mixture. Top with cheddar cheese. Bake 25-30 minutes or until hot. Garnish with sour cream, if desired. Serve with pita chips or baked tortilla chips.

A few other quick and easy ideas...


French dip..

aujus in the gravy section ( I usually make two of them)
follow the directions quick and easy
Throw in about a 1 lb of sliced roast beef from the deli.

deli roll toasted, we add melted chedder throw the roast beef on it and your done..

served with fries Yum!

Cracker Barrel Hashbrown Casserole

( Just a note I add hamburger to it to make it more of a main dinner)


SERVES 10 -12 (change servings and units)



Ingredients
2 lbs frozen hash browns
1/2 cup margarine or butter, melted

1 (10 1/4 ounce) can cream of chicken soup
1 pint sour cream
1/2 cup onion, peeled and chopped
2 cups cheddar cheese, grated
1 teaspoon salt
1/4 teaspoon pepper

Directions
1Preheat oven to 350°F and spray an 11 x 14 baking dish with cooking spray.
2Mix the above ingredients together, place in prepared pan and bake for 45 minutes or until brown on top.


Some people like to do monterey jack cheese instead of cheddar.

Well, I'll add a recipe because I absolutely love this bread and have to have it at least once a week! I usually eat it for breakfast. Gotta make some when I get home now!

--Downeast Maine Pumpkin Bread--

DRY MIX
3 1/2 C. Flour
2 tea. Baking Soda
1 1/2 tea. Salt
1 tea. Cinnamon
1 tea. Nutmeg
1/2 tea. Cloves
1/4 tea. Ginger

WET MIX
1 can (15 oz.) Pumpkin
4 Eggs
1 C. Vegetable Oil
2/3 C. Water
3 C. Sugar

*Grease and flour 3 bread pans. Add dry ingredients to wet and mix. Sprinkle sugar on top and cook at 350 for 50 minutes until a toothpick comes out clean.

Mmm... that sounds delicious! Definitely sounds like my contribution to Thanksgiving, this year.

This is a crockpot recipe for some yummy, easy meatloaf that Mel and I enjoy:

2 lbs. Hamburger Meat
1 package Lipton Onion Soup Mix
2 Eggs
2/3 cup Quick Oats (from the Oatmeal Aisle)
1/4 cup ketchup

Mix all of the ingredients together, leaving just a bit of ketchup to the side. Form the mixture into a loaf and place into a crockpot. Spread the remaining ketchup on top of the loaf. Cook on low for 6-8 hours or high for 4 hours. Serve with mashed potatoes and you have a rockin' meal for a cold, wet day!

** You can also substitute BBQ sauce for ketchup if you're in a "bang" kind of mood, or if you're out of ketchup like I was!**

Aight, here are two - counte 'em TWO - pasta recipes.

Classic Spaghetti with Marinara Meat Sauce

1 lb. ground beef (or turkey or italian sausage)
1 chopped medium-large onion
1-2 tablespoons garlic (depending on how much you like it!)
1 can of diced tomatoes (14.5 ounce)
1 can tomato sauce (15 ounce)
1/4 of a carrot (about 3 inches of carrot - HAHA) peeled and finely chopped or grated
1/4 of a celery stalk (again with the 3 inch joke) finely chopped
1-2 teaspoons of dry oregano
1-2 teaspoons of dry parsley
1 teaspoon of dry basil
1 teaspoon of dry thyme - chopped
(Whenever i use green peppers for something, i save the top and finely chop it and add it to the mix to add a little sweetness)
Salt and pepper to taste

Brown the ground beef, onions, and garlic until the onions are translucent. Add in the two tomato products, the carrot, and the celery (and green pepper if using). Add 1 to 1 1/2 teaspoons of the oregano and parsley, and all of the basil and thyme, as well as the salt and pepper. Bring to a boil and reduce heat and simmer (covered) for about 10 minutes, stirring occasionaly. After 10 minutes, taste and add more of the oregano, parsley, salt, and/or pepper depending on how you like it (i like a very strong herby flavor to mix in with the 'maters). Toss with a pound of cooked spaghetti/mostaccoli/rigatoni/whatever kind of noodle you like!




Fettuccini Alfredo with Chicken and Sun-dried tomatoes (its a hell of a lot easier than i thought it would be!)

2 Tablespoons butter
1 cup whipping cream
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
5-6 chopped/shredded oil-packed sun-dried tomatoes
1 1/2 cups chopped COOKED chicken (or shrimp is good too!) (i usually just grill the chicken and then chop it up)
1 teaspoon dry basil
1/2 cup freshly grated parmesan cheese

Melt butter in a large saucepan. Add the cream, salt, and pepper. Bring to a boil over medium to medium-high heat. Once boiling, reduce heat to low and allow to continue boiling gently (uncovered) until the mixture begins to thicken (using a whisk on this part helps a ton), usually about 8 to 10 minutes. Add the chicken, tomatoes, and basil. Heat through (about another 3-5 minutes). Remove from heat and stir in the parmesan cheese. Add about 3/4 lb cooked fettuccini noodles and toss to combine. Garnish with parsley and freshly grated parmesan cheese. Makes 4 servings (but i'm a fatty and can eat the whole thing by myself
(if you don't like the chicken/shrimp/sun-dried tomatoes part, then just add in half of the basil before adding the cheese)

Okay, here's some of our favorites!

Chicken Noodle Casserole

1/4 cup butter
1/4 cup flour
1 cup chicken broth
1 cup milk
1 chicken bouillon cube
1 teaspoon salt
1/4 teasponn pepper
2 cups bite-sized chicken pieces (cooked)
1 8-oz box thin noodles, cooked by package directions and drained

Topping:
1 cup soft white bread crumbs mixed with 3 tablespoons melted butter

Preheat oven to 350° F.

Melt butter in a large saucepan over moderate heat and blend in flour; slowly stir in broth and milk, add bouillon cube, salt and pepper. Heat, stirring, until mixture thickens. Off heat, mix in all remaining ingredients, except topping. Spoon into a buttered 2-quart casserole dish, sprinkle with topping and bake uncovered 1/2 hour.

About 555 calories per serving if made with chicken, 575 per serving if made with turkey.

I use wide egg noodles instead of thin noodles.

Pepperoni Lasagna

1 pound lasagna sheets
2 cups hand cut 1/8-inch slices pepperoni
6 cups tomato sauce, recipe follows
1 pound ricotta
16 ounces shredded mozzarella
1 pound bulk Italian sausage, cooked
3/4 cup grated Parmesan

Preheat oven to 375°

Boil 6 quarts of water, add pinch of salt, and cook pasta to almost done. Remove from water and shock in ice bath.

In medium saucepan add pepperoni and saute over medium heat until crispy. Remove from heat and drain on a paper towel.

Praline French Toast Casserole (The most decadent breakfast EVER)

8 eggs
1 1/2 cups half and half
1/3 cup maple syrup
1/3 cup packed light brown sugar
10-12 slices soft bread, 1 inch thick

Topping:
1/2 cup (1 stick) butter
1/2 cup packed light brown sugar
2/3 cup maple syrup
2 cups chopped pecans

Generously butter a 13x9 inch casserole dish. Mix the eggs, half and half, maple syrup and sugar in a large bowl. Place the bread slices in the prepared casserole dish and cover with the egg mixture. Cover with plastic wrap and let soak overnight in the refrigerator.

Preheat oven to 350°. Remove the casserole from the refrigerator.

Make the topping:
Melt the butter in a saucepan. Add the sugar and maple syrup and cook for 1 to 2 minutes. Stir in the pecans. Pour the mixture over the bread and bake for 45 to 55 minutes. All ow to sit for 10 minutes before serving.

We're pretty traditional at our house, Chrissy. Though here are a couple of non-traditional things I do to the traditional foods sometimes that are really good.

For mashed potatoes, I cook the potatoes getting them ready to mash. While they're cooking, I melt half a stick of butter in a frying pan and slowly saute thinly sliced onions (about 1-2 inch long pieces) until they're limp, not browned. When the potatoes are ready to mash, instead of adding milk and butter, I add a little chicken broth and the onion butter mixture. OMG they're good.

I make traditional cornbread stuffing and instead of putting it in the turkey or in a separate dish to cook, I wait until the turkey is about an hour from being done, take it out of the oven, and put the stuffing all around the turkey, so it soaks up the juices as it cooks. I can't tell you how much better that is. It's wildly good.

The only really non traditional thing I'm making this year that I usually don't make is roasted asparagus. Get two bunches, break off the ends just by bending the spears till they snap. (They always snap in the right places.) Toss them in olive oil to coat them. Spread them out on a cookie sheet. Salt and pepper to taste, and grate fresh parmasan on top. Put in a 410-425 oven for 10 minutes just before you serve dinner, and OMG they are the best thing EVER.
